You can go mountain biking...
Go out on wildlife cruises...
Go birdwatching... At Udale Bay just up the road, the RSPB have a birdwatching hide. Loads of birds pass through on migration, peaking in spring and autumn. You'll see oystercatchers (who don't catch oysters) curlews and redshanks all year round, with visitors between spring and autumn like dunlin, bartailed godwit, wigeon, teal and so on. The best time to go is 3 hours either side of high tide. There's another RSPB reserve at Nigg which you can reach by the ferry - summer only.
Speaking of which you can go on a ride to Nigg on the Ferry, in the summer... I've seen dolphins and seals - but only the grey seals, as the common seals aren't so common.
Go and watch Cromarty Football Club when they're playing at home! Their site has fixture details.
Take a stroll round the town - you can get an audio guide from the Cromarty Courthouse Museum , and learn a little of the local history. After, take a walk up to the Sutor!

You can swim in the Firth - while the beach here isn't Blue Flag, many folk including your editor do. Local kids dive into the water from the harbour and off the old slipway. I don't recommend that and the harbour frown on it, but it looks spectacular.

Do courses or workshops - the Cromarty Adult Learners Group used to run all sorts of things, and there's always something going on.
